Nutrient Booster: Oranges + Skyr

Just in time for Halloween, oranges make the perfect juicy, sweet snack and add an abundance of health properties to any recipe. The nutrients in oranges are plenty and diverse. Oranges are a good source of several vitamins and minerals, especially vitamin C, thiamin, folate, fiber and potassium. They also aid with heart health, cholesterol levels and may reduce the risk of respiratory diseases and certain cancers. Our Jack O’Lantern recipe is a naturally sweet way to boost your energy without the irritability, headache and fatigue that comes with Halloween’s sugar crash.

The skyr in this recipe adds vitamins and minerals to this Halloween treat, making it both nutritious and delicious. Its nutritional properties are almost identical to Greek yogurt, boasting high protein and calcium, but skyr is lower in sugar and has a sweeter taste. Skyr may also promote bone and heart health and help regulate blood pressure. Skyr Filled Jack-O-Lanterns

  • 4 oranges, approximately 1 1/2 cups of orange sections
  • 1 cup strawberries, washed and diced
  • 1 cup banana, diced
  • 2 tablespoons orange juice
  • 1 (5.3 ounce) container Icelandic Provisions Skyr
  • 2 tablespoons Sea Salt SuperSeedz, or flavor of choice
  • 1/2 teaspoon cinnamon
  • mint leaves for garnish


  • With a pairing knife, cut a small horizontal slice on the bottom of each orange so it stands straight up. Then, cut a 4 ” slice on the opposite side for the removable top.
  • Spoon out the orange flesh and pulp. Place the orange sections onto a cutting board, and slice the oranges into small pieces. Place in a medium sized mixing bowl.
  • Add the oranges, strawberries, banana, orange juice, skyr, Superseeds Pumpkin Seeds of your choice and cinnamon in the mixing bowl, and combine well with a spatula. Set aside.
  • On the orange peels, use a marker to outline faces for different pumpkin designs. Use a pairing knife to cut out the designs.
  • Spoon fruit mixture into the jack-o’-lanterns, and sprinkle with mint leaves, if desired.
