Ingredients

  • 2/3 cup crushed Ka-Pop! chips, Rosemary Garlic flavor
  • 1 teaspoon white wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 2 medium avocados, sliced

Instructions

  • Preheat oven to 425⁰F degrees. Line a baking sheet with parchment paper.
  • Place Ka-Pop! in a resealable bag and crush them until the consistency is similar to panko breadcrumbs.
  • In a shallow bowl, add the vinegar, lime juice, olive oil, sea salt, garlic powder and red pepper flakes. Whisk until emulsified. Place a few slices of avocado at a time into the lime juice mixture. Coat each slice of avocado with the Ka-Pop! so as to fully cover it, and place each slice of Ka-Pop! coated avocado on the baking sheet. Bake the avocado slices for 7 minutes then flip using a spatula for an additional 6-7 minutes or until lightly golden on each side. Using a spatula transfer the avocado slices onto a serving platter. Serve immediately with hot sauce, Sriracha or salsa to dip the avocado fries in.
