Baked Asparagus With Lemon Skyr | Simple Summer Side
Sometimes the most simple recipes are the best recipes but don’t let the simplicity of our Asparagus with Lemon Skyr fool you because this side has big flavor! As asparagus cooks, its natural sugars begin to caramelize, giving it a smoky, slightly sweet taste. While we would be content to eat it just like that, we love to complement the heavier flavor of the asparagus with our light and refreshing Lemon Skyr Sauce. Our sauce is made with Icelandic Provisions Skyrbecause it is packed with protein, not sugar, and is gluten-free, preservative-free, and vegetarian-friendly. We combine it with fresh lemon juice and minced garlic to create a savory, tangy, citrusy topping that is perfect for drizzling over our tender green spears. This sauce is bright but rich, and the thick skyr makes it extra creamy while still keeping it summery-light. The contrast between the warm asparagus and cool skyr sauce creates a nutrient-dense marriage of textures and delicious depth of flavors. Surprisingly simple, our Lemon Skyr sauce elevates even the plainest of veggies into a sophisticated side.
Nutrient Booster: Asparagus
Asparagus is an excellent source of essential vitamins and minerals, especially folate and vitamins A, C, and K. Like other green vegetables, it is high in antioxidants which prevent the accumulation of damaging free radicals in the body and may reduce blood pressure, inflammation, and the risk of heart attacks. Asparagus is a good source of fiber which promotes digestive health and may help lower the risk of heart disease and diabetes. It is easy to incorporate the nutritional benefits of this versatile vegetable into a healthy diet. Add chopped asparagus to salads or wraps, saute it, scramble it with eggs, stir-fry it, or serve it as a delicious and nutritious side dish.
Make Once, Eat Twice
Our Asparagus with Lemon Skyr recipe includes the perfect make once, eat twice ingredients. Leftover asparagus and sauce can be stored separately in the fridge for 3-5 days for use in many of your favorite dishes. While we love serving asparagus as a side, it makes a healthy addition to so many main meals, like our Asparagus and Mushroom Risotto. You can add asparagus to a quiche, toss it in pasta, puree it in soup, chop it in a salad, or include it veggie sandwiches, like our Hummus Vegetable Wrap. And because Lemon Skyr is a versatile condiment, it can be used as a dip for our Baked Avocado Fries, or a sauce for our Black Sesame Seed Encrusted Salmon. One simple recipe can add extra nutrition to so many more meals.
Asparagus with Lemon Skyr
- 1 teaspoon olive oil
- 2 bunches asparagus, washed and ends removed
- 1/2 teaspoon sea salt, divided
- 1/4 teaspoon pepper
- 2 (5.3 ounce) containers Plain Icelandic Provisions Skyr
- 1 clove garlic, minced
- 2 tablespoons lemon juice
- Preheat oven to 425ⁿF. Line a sheet pan with parchment paper, and grease with olive oil.
- Arrange asparagus on the sheet pan, and sprinkle with 1/4 teaspoon salt and pepper. Bake for 20 minutes, or until soft. If using thinner asparagus, check at 10 minutes.
- While the asparagus is cooking, add Icelandic Provisions plain skyr, garlic, 1/4 teaspoon salt, and 1 tablespoon lemon juice taste to a small mixing bowl. Combine well, and add more lemon juice if desired. Set aside.
- Remove the asparagus from the oven, and place it on a serving platter. Add the skyr to the serving platter (either on the side or on top of the asparagus), and serve.
