Caprese Cottage Cheese Toast

Ingredients
  

  • 1 slice 100% whole wheat bread, toasted
  • 1/4 cup Daisy low-fat cottage cheese
  • 4 cherry tomatoes, halved
  • 2 tablespoons fresh basil, chopped
  • salt and black pepper, to taste
  • 1 teaspoon olive oil

Instructions
 

  • Toast bread to desired crispiness. 
  • In a small bowl, mix cottage cheese with salt and pepper. Spread cottage cheese onto toast and top with cherry tomatoes and shredded basil. Drizzle olive oil over toast. Enjoy.
