Preheat oven to 425ⁿF. Line a sheet pan with parchment paper, and grease with olive oil.
Arrange asparagus on the sheet pan, and sprinkle with 1/4 teaspoon salt and pepper. Bake for 20 minutes, or until soft. If using thinner asparagus, check at 10 minutes.
While the asparagus is cooking, add Icelandic Provisions plain skyr, garlic, 1/4 teaspoon salt, and 1 tablespoon lemon juice taste to a small mixing bowl. Combine well, and add more lemon juice if desired. Set aside.
Remove the asparagus from the oven, and place it on a serving platter. Add the skyr to the serving platter (either on the side or on top of the asparagus), and serve.
