Greek Salad Cottage Cheese Toast

Servings 1 serving


  • 1 slice 100% whole wheat bread, toasted
  • 1/4 cup Daisy low-fat cottage cheese
  • salt and pepper, to taste
  • sliced cucumber
  • sliced red onion
  • 1 tablespoon fresh parsley, chopped
  • lemon juice, to taste


  • Toast bread to desired crispiness.
  • In a small bowl, combine cottage cheese with salt and pepper. Spread cottage cheese on toast and top with cucumber, red onion and parsley. Squeeze lemon juice over toast.
