Sloppy Joe's

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup white onion, finely chopped
  • 1 pound ground turkey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 3/4 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated carrot
  • 1 (15 ounce) can low-sodium crushed tomatoes
  • 2 tablespoons apple cider vinegar
  • 1 cup pinto beans
  • 6 whole wheat buns
  • romaine lettuce leaves
  • tomato slices
  • red onion slices

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add onion for a few minutes and then add ground turkey. Cook the meat for about 8 minutes until turkey is browned, stirring occasionally to crumble the turkey.
  • Add carrots, garlic powder, oregano, cayenne pepper (optional), salt, black pepper and turmeric. Cook for two minutes, stirring occasionally. Pour in tomatoes and apple cider vinegar and stir well; bring to a simmer. Reduce heat to medium and cook for about 10 minutes or until the sauce is thickened and carrots are tender, stirring occasionally.
  • Add beans and mash with a fork, back of a slotted spoon or use a potato masher. Add mashed beans and remaining beans to pan. Cook for one minute or until thoroughly heated.
  • Serve on a whole wheat hamburger bun or a romaine lettuce leaf and roll into a wrap. Serve with sliced red onions and or lettuce and sliced tomatoes.
